Manchego is a cheese made in the La Mancha region of Spain from the milk of sheep of the manchega breed. Manchego is a moderately aged, hard sheep's milk cheese with a smooth, creamy, and a little bit granular texture. The cheese tastes sweet and salty as well as lightly nutty.
This cheese is perfect on crusty breads, for snacks or used in sandwiches or as an appetizer in tapas.
Pair this Manchego with fruity Spanish wines, both white and red. Try a sparkling Cava or a light red. Alternatively, pair with a dry sherry.
