Sarah our popular cheese sculptress returns to recreate our beloved “Klaus Mouse” mascot from a 75-pound Mammoth wheel of delicious Wisconsin cheddar. Watch as the new Klaus emerges and enjoy Wisconsin cheddar samples.
Sarah’s 25 years of cheese carving adventures have taken her to every state in the Union, most recently to the PGA in Maui, NFL Raiders, Packers and Titans stadiums and to her third Kentucky Derby! The natural-born cheese head from Wisconsin says chiseling cheese just comes naturally. “I’ve carved well over 3,000 cheese creations and have just lost track.”

From Cheddar Block to Showpiece
The process is mesmerizing. Using specialty tools (and a whole lot of skill), our carver etched intricate shapes, textures, and even custom lettering into solid cheese.
Every cut, every curl, every line tells a story, and yes, that story is delicious.
